Imagine having a meal at a restaurant and realising actor Mel Gibson is seated at the table next to you. He then initiates a conversation, you get along famously and you end up swapping phone numbers. While it sounds like a scene from a Hollywood movie, this happened to Guildford-based health coach Sam Jackson.

Her chance meeting with the star occurred on a business trip with her husband where they dined with friends at the Intercontinental hotel in Sydney’s Double Bay. Over the past eight weeks she has been coaching the Mad Max star and is responsible for his staggering 14 kg weight loss.

We were just having dinner, he was seated at the table next to us and we just struck up a conversation because he was on his own,” Jackson, 45, told AAA Weekend. "We all got talking and he started saying how he has this belly he can’t get rid of and I said ‘Give me eight weeks with you, I’ll get rid of it’.

Jackson is a former corporate high-flyer who held several senior executive positions at HBF, Bupa and the Commonwealth Bank, but retrained as a nutritionist four years ago.
